Season 4-5 pork chops with salt, pepper, and garlic powder and brown them in a little oil (don't fully cook them at this time because they'll be dry). Transfer chops to a 9x14 pan, sprinkle 1 1/2 cups of uncooked white rice (and, optionally, 4 chopped carrots) on top of chops. Pour 3 cups 2 ounces of beef broth over all and cover with aluminum foil. Bake at 350 degrees for 1 hour.
- Heather note: fine to use brown rice and forget the aluminum foil
(Mom note: The recipe from the cookbook says to put the chops, 1 cup of uncooked rice, and 2 cups 2 ounces of beef broth in a 2 quart casserole and bake at 350 degrees for l hour. It also says you can use chicken broth or onion soup instead of beef broth. I adjusted the recipe for our family (and I don't know how you can get 4 pork chops to lie evenly in a 2 quart casserole).)
