- 1 onion, chopped
 - celery (optional), chopped
 - flavorful fat (e.g., bacon, ham, butter)
 - 2 good size baking potatoes, peeled and chopped
 - 3/4 lb fish fillets (e.g., cod, haddock) - esp. good when smoked
 - 1 can evaporated milk
 
- Saute onion & celery in the fat until tender, about 5 minutes.
 - Add potatoes & just enough water to cover them. Boil for about 10 minutes.
 - Rinse fish fillets and cut into chunks (easiest with scissors).
 - Add fish chunks lying on top. Cover and steam for about 5 minutes.
 - Pour can of evaporated milk over all and cook for an additional 5 minutes.
 - Add seasonings as desired: e.g., pepper, paprika, lemon.
