2 cups Bisquick baking mix (or make your own biscuit mix and use the same amount)
2 tbsp. sugar
1 egg
2/3 cup water or milk
optional: 1 can cherry pie filling
Streusel Topping
Mix 2/3 cup Bisquick baking mix, 2/3 cup packed brown sugar, 1 tsp. cinnamon, 4
tbsp. firm butter or margarine, and 1/2 cup chopped nuts (I use almonds or
pecans because your Dad doesn't care for walnuts, the nuts are also optional). This recipe says to
mix the ingredients for the topping but you'll need to mix the ingredients,
except the nuts, with your fingers or cut them in altogether. Then add the nuts.
Heat oven to 350 degrees. Grease or spray with Pamlike spray 13"x9" pan. Mix
all ingredients except cherry pie filling and streusel topping, beat vigorously
30 sec. Spread in pan.
Spoon cherry pie filling on top of batter.
Then sprinkle with the streusel topping.
Bake for 20 to 25 min.
(vaguely remembered) Note from Mom: I double the cake recipe & triple (?) the streusel to fill the 9x12 pan.
(Heather note) I use the specified batches in a 9" square pan. Tried defrosting 3/4 cup frozen blueberries to add instead of cherry pie filling; tasty, but added 10 minutes to cooking time.
