- 1 egg
 - 1 cup milk
 - 1/4 cup oil
 - 2 cups flour
 - 1/4 cup sugar
 - 3 teaspoons baking powder
 - 1 teaspoon salt
 - 1 cup dried cranberries
 
- Preheat oven to 400 degrees.
 - Beat egg with fork; stir in milk & oil.
 - Combine flour, sugar, baking powder, salt, and cranberries.
 - Add flour mixture to egg mixture; stir until flour is just moistened.
 - Fill 12 greased muffin cups about 2/3 full.
 - Bake for 20 to 25 minutes.
 
- Variation: substitute 1 cup whole wheat flour for 1 cup of the white, and reduce baking powder to 2 teaspoons.
