Ideas:
There are many great student council project ideas that can benefit your school and community. Here are a few suggestions:
Organize a school-wide fundraiser for a local charity or non-profit organization.
Host a school-wide clean-up day to improve the appearance of the school grounds.
Create a peer mentoring program to support students who may be struggling academically or socially.
Host a school-wide talent show to showcase the skills and talents of your fellow students.
Organize a school-wide food drive to support a local food bank or pantry.
Host a school-wide wellness fair to promote healthy habits and lifestyles.
Create a school garden or outdoor learning space to promote environmental awareness and education.
Host a school-wide cultural fair to celebrate the diversity of your school community.
Organize a school-wide book drive to support literacy initiatives in your community.

Saint Valentine’s day
Hang up some posters at school, saying that students can have roses sent to another student for like a dollar. The student council will collect the money, names + class-name of the students and a self-written poem/text in the next couple of days - during lunch break.
Make some deal with a florist to have your pre-ordered roses ready on Valentine’s Day. Get all the timetables of all the students and figure out on what time you’re going to bring the students their roses. Some guys at my school even buy an entire bouquet for their SO.

Small Scale:
Bulletin board clean-up: removing flyers for past events, putting on new paper, and decorating the boards for a school event
Arranging a day for council members to assist teachers after school in whatever way they choose. This could be grading, organizing, sorting, moving in or out of classrooms for the year, etc.
Advocating for better school spirit. Leading by example is great because it embodies positive leadership and service. This can be attending school events - especially for less popular sports or clubs (think track meet or tennis match instead of football or basketball game), spreading positive attitudes by smiling and greeting other students and faculty warmly, and representing the school well in the community through service and acting respectful while wearing school attire.
Larger scale:
Organizing a school clean-up day. My school does this the first weekend of August and invites the whole community to take part. It's a fun time to connect with friends and family while beautifying the school, inside and out.
Advocate for new programs to help students academically, socially, and mentally/emotionally. This involves meeting with administration (and probably school board members) which is a lot of work, but very rewarding if successful.
Coordinate an awesome "8th grade" gift. This can be many things and will require a lot of fundraising. Figure out what your school desperately needs and fix it. Don't just give something out of expectation.

I was the Student Body President of the Student Council in my high school. Here is what I would recommend as a Student Council President veteran:
Ask your principal what do they see needs improvement with your school.
Determine if you and your colleagues can fix whatever is on the principal's mind.
Ask your peers in casual conversations what do they think would make school better.
Bring those requests (as long as they are reasonable, doable and legal of course) to the table with your Student Council colleagues.
See if there are local communities that need volunteers and discuss it with your fellow officers.
