For general all round pencil drawing, a 1B or 2B pencil is the best choice. If you prefer working with a pen, try a fine line or Superfine or even the Pentel brush pen. Whichever medium you pick, make sure that you keep it safe in a box or bag with you and have a sharpener, and use a rubber for corrections.
If you aren't going on holiday, make similar drawings of locations near where you live: your house, garden, street or a park or row of shops nearby. Draw things you can see as accurately as possible.
Make at least one of your three drawings a line drawing. A line drawing is just the outlines and features no shading.
Make your drawings fill the page.
If you are going on holiday somewhere, (you might, if only for a weekend) take at least one of your sketchbooks along and do three drawings. You could make drawings about the landscapes or buildings that you see on location or, a still life drawn from cups, saucers, plates, and bottles on a table after a meal.
Eric Ravilious - landscapes
Casper David Friedrich - landscapes
Edward Hopper - white buildings
David Bomberg - drawings of London
George Shaw - streets and houses
