Here is my friend's recipe for the tortilla soup. She did not list the size of the cans, so for the beans I used a can about the size of canned corn and for the hominy I used a can that was about twice that size. I did not find the garlic salsa, so I just used a tub of the fresh cut salsa and a second tub for the topping. (ps. I doubled the following recipe and it filled the large pot).
Tortilla Soup:
2 cans/boxes chicken broth
1 can garlic salsa
1 can black beans
1 can hominy
1 roasted chicken
avocado
tortilla chips
queso fresco (soft Mexican cheese) and/or shredded cheese of your choice
sour cream
hot sauce
In a large pot, combine chicken broth, salsa, beans, hominy and chicken (pull apart/shred chicken into small bit size pieces). Bring to a light boil, then simmer for desired amount of time (I simmered it for about 3 hours).
Cut cheese and avocado into small bite-size pieces. Serve all remaining ingredients on the side, to be added as desired.
You can of course modify this recipe any way you wish. If you like extra spice, use a larger can of salsa, or two cans. I used extra hominy because I really like hominy and don't get to eat it too often. I also doubled the recipe.
