Blueberry coffeecake (quick)

We can't all be Patty or Rob, getting up at ungodly hours to make sure that the coffeecake has risen and is ready for breakfast!

Use the Key Recipe, and add the blueberries. NOTE: only add the extra flour if you are using frozen blueberries.

Blueberry coffeecake (quick)

We can't all be Patty or Rob, getting up at ungodly hours to make sure that the coffeecake has risen and is ready for breakfast!

Prize Coffeecake (Key recipe)

Mix thouroughly

    • 3/4 cup sugar

    • 1/4 cup soft shortening

    • 1 egg

then stir in

    • 1/2 cup milk

Finally Sift together and stir in

    • 1 1/2 cup sifted flour

    • 2 tsp baking powder

    • 1/2 tsp salt

Spread batter in greased and floured 9" square pan. Sprinkle with desired topping (see bellow).

Bake until toothpick stuck into center of cake comes out clean. Serve warm, fresh from the oven.

Temp: 375 degree

Time: 25- to 35 minutes

Amount: 9 3" squares

Blueberry Buckle

Follow key recipe, except use 2 cups of flour (if frozen berries, for fresh blueberries use 1 1/2 cups)

Carefully blend in at the last 2 cups of well drained blueberries. Sprinkle top with:

Crumb mixture

Mix

    • 1/2 cup sugar

    • 1/3 cup flour

    • 1/2 tsp cinnamon

    • 1/4 cup soft butter

Bake: 45 to 50 minutes
