PASTA with Garden Fresh 'extras'
Cook pasta according to directions on package
In a large frying pan :
1/4 cup olive oil
6 diced tomatoes just picked from your garden
1 eggplant just picked from your garden (or zucchini in a pinch)
1 handful of basil just picked from your garden
1 can of olives
*heat olive oil and cook eggplant first until tender,
Add the tomatoes and basil and olives just long enough to get hot.
Serve over the pasta IMMEDIATELY
