If no speed is shown and GPS indicator is red.
Please be sure to try under the open sky and give GPS receiver up to 10 seconds to find some satellites. In a train, please move as close to a window as possible to give GPS receiver a better view of a sky. If it is a TGV/modern type of train, please note that they cover windows with a film that shields a lot of GPS signal away.
If you experience the problem under the open sky, I think simple iPhone restart (power off/on) should get GPS receiver back into good shape.
If GPS indicator shows OFF even under the open sky, please check that iPhone's (or cellular iPad) Settings>Privacy>Location services are ON. Then under location services check that speedometer app has its location switch in "When In Use" position.
If, by chance, you have iPhone connected to the car's "direct USB" port, it makes sense to try without having the iPhone connected to it. There are several confirmed cases when signal from a "direct usb" port in a car was interfering with the internal GPS receiver data.
In rare cases, to get GPS receiver working properly, it is required to restart the iPhone (or cellular iPad) completely by powering it down (long hold on the power button and confirm the switch off) and then on again (by pressing the power button). Then please try again under the open sky.

App's GPS indicator (and speed numbers) goes by location accuracy, showing GPS OFF (and no speed numbers) is equal to location accuracy being worse than 25 meters (80ft) and thus speed can't be shown reliably. Low location accuracy means that built in GPS receiver can't "see" enough satellites to start delivering accurate location or there might be some interference with GPS signal.
