March is a month of celebration for Irish culture in the United States, highlighted by St. Patrick’s Day on March 17, 2025. A staple of Irish cuisine and culture, the potato is a versatile root vegetable which can be prepared in a wide variety of ways. As St. Paddy’s Day approaches, impress your spuds with the five potato dish recipes below.
French Fries:
Peel the potatoes. Cut the potatoes into fry-shaped spears. Soak in cold water for 30 minutes to get rid of excess starch. Pat dry and season with preferred seasonings, such as salt, pepper, or even paprika. Deep fry at 350F for 3-5 minutes, let rest, and then deep fry again at 400F for 2-3 minutes. Sprinkle with salt and serve with mayonnaise.
Mashed Potatoes:
Peel the potatoes. Cut the potatoes into medium-sized squares. Boil water and boil potatoes until they fall off a fork when stabbed, about 30-40 minutes depending on the size of your cut. Drain the water and mash the potatoes. Add in butter/heavy cream/milk, salt, and seasoning of your choice. Optionally, serve with steak, broccoli and gravy.
Baked Potatoes:
Wash the potatoes and poke holes in them using a fork. Place on baking sheet, sprinkle with salt, set oven to 350F, and bake for 50-60 minutes until done. Slice open or halve the potatoes, and optionally serve with sour cream and chives.
Roast Potatoes
Peel the potatoes. Cut the potatoes into bite-sized squares. Toss in oil and a spice blend of your choice. Spread on baking sheet and cook at 400F for 40-50 minutes or until done, flipping halfway through. Optionally, serve with grilled salmon and sauteed carrots.
Potato Chips
Peel the potatoes. Cut into thin chips (ideally using a mandolin slicer). Soak the potato slices in cold water for 30 minutes to remove excess starch. Dry the potatoes and heat frying oil to about 360F. Fry the chips in batches, stirring constantly for 3-4 minutes. Sprinkle with sea salt and let cool.
