Valentine’s Day is right around the corner, so get your sweet tooth ready! Lots of gifts and treats are on their way, but our favorite symbol of affection is cookies! This recipe yields the perfect Valentine's Day lemon crinkle cookies.
Ingredients:
2 cups flour
½ cup butter
1 cup sugar
1 teaspoon salt
Splash of vanilla extract
Juice of 1 lemon
1 teaspoon baking soda
1 egg
Powdered sugar
Pink/red food dye (optional)
Steps:
1). Preheat your oven to 350 degrees.
2). In a small bowl, whisk together the flour, sugar, baking soda and salt. Set aside.
3). In a large bowl, combine the softened butter and the sugar in a stand mixer.
4). Add the egg, vanilla extract, lemon juice, lemon zest, and food coloring.
5). Add the dry ingredients and mix with a spatula until the flour is not visible.
6). Flatten the dough into a disk and wrap in plastic, then place in the fridge for 2 hours or the freezer for 45 minutes.
7). After the dough is chilled, line a baking sheet with parchment paper and place the balls of dough 2 inches apart.
8). First coat the dough balls in granulated sugar, and then coat with powdered sugar.
9). Place the baking sheet in the oven and bake for 14 minutes, chill for 5 minutes.
