The holidays are around the corner, which means it’s peppermint season! Peppermint bark is a great and simple desert, snack, or gift. This recipe is super easy and sweet. You can adjust the chocolate quantities to your liking; if you want more of a semisweet chocolate taste, I would switch the amount of semisweet chocolate from 12 to 16 and the amount of white chocolate from 16 to 12. I hope you enjoy this recipe just as much as I enjoyed making it!
Ingredients:
12 ounces semisweet chocolate chips
16 ounces white chocolate chips
1/2 teaspoon peppermint extract
1 cup crushed candy canes
Start by putting one candy cane at a time into a ziplock bag and crush it up. I used a rolling pin. Do this over and over again until you have about 1 cup. I love heavily coated peppermint bark, but feel free to adjust this amount to your liking.
I don't have a microwave so I'm using the double boiler method - if you have a microwave skip step two and go to step three. If you are reading this it means you are melting your chocolate chips through the double boiler method. Pour some water in a saucepan, about an inch high, set the flame to medium and get it to a boil. Get a heat proof bowl and place it over the saucepan and pour your semisweet chocolate chips into it. Still continuously until there are no clumps.
If you followed step two (the double boiler method) skip step three. If you are reading this it means you are melting your chocolate chips in the microwave. Place your semisweet chocolate chips in a microwave safe bowl and microwave for 30 second increments until melted. Stir until there are no clumps.
Now that your semisweet chocolate is melted, pour onto a baking pan lined with parchment paper. Let set for at least 15 minutes.
If you aren't doing the double boiler method, move onto step five. If you are reading this it means you are melting your chocolate chips through the double boiler method. Pour some more water in a saucepan, the same height as last time, and set the flame to medium and get it to a boil. Get another heat proof bowl and place it over the saucepan and pour your white chocolate chips into it. Stir continuously until there are no clumps. Once melted add the peppermint extract while stirring continuously.
If you are melting your chocolate chips in the microwave, complete this step, if not, move onto step six. If you are reading this it means you are melting your chocolate chips in the microwave. In a separate microwave safe bowl place your white chocolate chips in it and microwave for 30 second increments until melted. Once melted add the peppermint extract while stirring continuously.
After the semisweet chocolate is set, spread the white chocolate over the semisweet chocolate layer. Top generously with candy canes. Let it harden in the fridge for about 20 minutes or until the chocolate is completely set.
Once set, remove from the fridge and let the bark sit at room temperature for about 10 minutes. Cut or break into desired sizes and serve.
