In your peripheral vision, you notice a tower of what appears to be meat skewered rotisserie style, but it sure doesn’t look like your average chicken. You turn around to get a better look and you witness a man yelling, “fresh meat, fresh meat,” his words in sync with the steam rising from the stove below. The meat, now appearing to be pork, or lamb, is held by this triangular shaped contraption. You snap out of your daze when the man running the stand steps in front of the giant and he starts scraping thin slices of the mystery meat into a plate. This man has two tasks- prepare the delicacy of meats unfolding at his spatula, while beckoning tourists and locals to try the finished product. Five euros, he tells you. You certainly can’t pass on a good deal, especially when it comes to street food. In a quick exchange, you soon have his creation in your hands- a fluffy, lightly roasted pita bread filled to the brim with fresh tomatoes coated in olive oil, tzatziki with the thickest consistency from being hung in a muslin cloth for thirty minutes, crispy, lightly salted french fries, but with no onion in sight, par to your requests. You take a bite and your taste buds instantly get flooded with savory delight, a word that the Japanese have came up with called “umami.”. The minced pork meat and pita bread feel chewy against your teeth, feeling relieved that you don’t have to go through the hassle of ripping the meat apart like an insatiable carnivore, due to its soft texture. You rip apart the aluminum foil holding your delicious Greek style wrap, unfolding more and more layers of it’s steamy goodness. Before you know it, you’re done. You use the last bits of your pita bread to dip it into the same tzatziki sauce that was gently spread on it’s fluffy dimensions earlier. The tzatziki, when combined with the meat, and fast food style fries, gave your meal a tangy taste, thanks to the combination of minced garlic cloves and salt. By itself, it saved the bread, and the meal, from that unfortunate dry feeling that could’ve left you choking on your food. You look over at the man and decide to go back for some seconds, remembering to ask for extra tzatziki and french fries this time.
