Speculaas spice mix
My first experience with Speculaas (the biscuits) was with a Dutch friend many years ago. She didn't make her own but bought them at a local supermarket. I was aware of the taste of cardamom but never realised the complexity of spices that made up the Speculaas spice mix.
I recommend using a scale to measure the spice but if you're not confident that your scales are fine enough for measuring such small portions, simply use teaspoon measurements in the following proportions of 8:2:2:1:1:1 and you should be fine.
The purists would grind their own spices where possible. I don't bother as I usually have these spices already ground in my spice rack. Just make sure the spices are fresh.
Ingredients:
- 8 grams cinnamon powder
- 2 grams ground cloves
- 2 grams ground nutmeg
- 1 gram ground white pepper
- 1 gram ginger powder
- 1 gram ground cardamom
Method:
- Weigh or measure the spices, mix and store in a screw top jar until needed.
Tips:
If you weigh the spices, this mix should give you enough to make up a batch of Speculaas biscuits.
