Walnut Strips
This recipe reminds me of Kourabiedes (Greek cookies), those wonderful confections made with chopped almonds, shaped like crescents and has a clove stuck into the middle of them. I like this recipe just as much. Try to use eating walnuts - the cooking walnuts are too bitter for my taste.
Ingredients:
- 250g butter
- 1/3 cup sugar
- 1 tsp vanilla essence (1/2 tsp vanilla paste or extract)
- 1 tab water
- 2 cups plain flour
- pinch of salt
- 1 cup finely chopped eating walnuts
- sifted icing sugar
Method:
- cream butter, sugar and vanilla
- add water and beat in well
- fold in flour, salt and chopped walnuts
- form the dough into a ball, cover and refrigerate for 1 hour to firm up the dough
- take portions and form into finger shapes
- place on lined baking tray
- bake for 20 mins in a moderate oven until lightly browned
- remove from tray and roll carefully in sifted icing sugar
- allow to cool on rack
- roll in icing sugar again and store in an airtight container - place baking paper in between layers of biscuits to protect them.
