Chester Cake

I have a feeling that this recipe came from Aunty Dell. It's a cake that is made from another plain cake that is a bit stale and needs to be used up. The cake is cooked in a pastry case. You can sometimes buy Chester Cake in the supermarket.

Pastry Ingredients:

  • 1 1/2 cups SR floour
  • pinch of salt
  • 2 tab sugar
  • 4 tab butter
  • 1 egg
  • 2 tab cold water

Method:

  1. Put all the ingredients into the bowl of a food processor
  2. when the pastry comes together, stop processing
  3. halve the dough and roll it out to fit the base and top of a square cake tin.

Cake Ingredients:

  • 2 cups of cake, crumbled
  • 1/2 cup milk
  • 1 tab apricot jam
  • 1/2 cup sugar
  • 1 tsp mixed spice
  • 1/2 tsp nutmeg
  • 1 cup mixed fruit
  • 1 tab rum or madiera

Method:

  1. soak the cake in the milk
  2. add the other ingredients and mix well
  3. if the mixture seems too wet, add a little SR flour
  4. pour onto the pastry base
  5. cover with the second layer of pastry
  6. bake in a moderate oven until the pastry is golden brown
  7. cool in the tin
  8. top with icing coloured with a little red food colouring
  9. cut into squares to serve.
