Ginger Cake

One of my Mum's recipes.

Ingredients:

  • 1/4 cup sugar
  • 1 tab butter
  • 1 egg
  • 1 tab golden syrup
  • 200ml milk
  • 1 1/2 cups SR flour
  • 1 tsp powdered ginger
  • 1 tsp mixed spice powder
  • 1 tsp bicarbonate of soda

Method:

  1. Cream sugar and butter
  2. add egg and beat well
  3. add syrup and milk and beat until all are combined
  4. fold in dry ingredients
  5. pour into a greased and lined loaf tin
  6. bake in a moderate oven until cooked when tested
  7. remove from tin and allow to cool
  8. ice with honey flavoured cream cheese frosting.
