Tea Cake
This is an unpretentious cake, quick to make and small enough to enjoy for morning or afternoon tea with friends. It is nicest eaten within a couple of hours of baking.
Ingredients:
- 1/3 cup sugar
- 1 tab butter
- 1 egg
- 1/3 cup milk
- 1/2 tsp vanilla essence
- 1 cup SR flour
Extra:
- butter for spreading
- sprinkling of sugar
- sprinkling of cinnamon powder
Method:
- Cream butter and sugar
- add egg and continue beating until combined
- stir in milk and vanilla
- fold in the flour
- pour into a small cake pan which has been greased and floured
- bake in a moderate oven for about 1/2 hour - until cooked when tested with a skewer
- remove from the tin to a cooling rack
- while still hot, spread butter over the top and sprinkle with sugar and cinnamon.
