Serves 1
2 slices of wholemeal brown bread
20g of butter
50g of cheese
1 small onion, chopped into thin strips
1 tbsp of olive oil
2 tsp of balsamic vinegar
½ tsp light brown sugar
If you wish to add the caramelised onion
take the chopped onion and place into a preheated pan with hot oil
Start frying the onion over a low heat, moving them around occasionally to evenly cook them
Once the onions are soft, add the balsamic vinegar and sugar and fry for a further 2 mins to infuse the flavours
Spread butter very generously over one side of each slice of bread, so there is a full coating across the surface of the bread
Grate the cheese in a bowl
Assemble the toastie with the first piece butter side down, all the cheese (and caramelised onion if you want it) inside and the second piece of bread butter side up. The buttered side should be on the outside
Cook in a non stick pan at a medium to low heat on the hob on each side until crispy and golden brown (this takes roughly 2-3 mins). Whilst cooking, ensure you keep the toastie moving in the pan so it doesn’t stick
The nice thing about this recipe is that you can use any cheese you like… brie, cheddar, camembert etc
