200g of sweet dark chocolate
115g of butter
125g of granulated sugar
50g of brown sugar
3 eggs
1 pinch of salt
1 tsp of vanilla extract
70g of flour
30g of cocoa powder
Grease and line a 20cm by 20cm baking tray with baking parchment
Preheat the oven to 180℃
Cut the chocolate into small pieces, and melt in the microwave along with the butter. Take it out every 30 seconds until completely melted
Mix both types of sugar together in a large bowl. Then beat each egg in, one at a time
Add the salt, vanilla extract and the melted chocolate and butter mixture. Stir to combine
Sieve the flour and cocoa powder into the mix, then fold in very gently with a spatula until thoroughly combined
Pour the mixture into the baking tray ensuring that it is in a even layer across the whole baking tray
Bake for 30 mins
Once done, take out of the oven and allow to cool for 5 mins before removing from the baking tray and cutting into slices
You can play with the taste of your brownies by replacing some of the dark chocolate with milk or white chocolate. Have fun with it!
