Lentil sauce and spaghetti (vg)

Ingredients

  • 2 tablespoons of oil

  • 1 large onion, chopped

  • 1 clove of garlic, crushed

  • 400g of canned tomatoes

  • 225g of split red lentils

  • 400ml of water

  • ½ teaspoon of dried mixed herbs

  • ½ teaspoon powdered cinnamon

  • Salt and pepper

  • Spaghetti (as much as you need)

  • Grated cheese to serve on to

Method

  1. Heat the oil in a medium sized frying pan and fry the onion and garlic gently until tender

  2. Add the tomatoes, lentils, water, herbs and cinnamon

  3. Simmer until the lentils are soft (takes approximately 20mins). Make sure you keep an eye on the sauce as the lentils cook quickly

  4. While the sauce is simmering, cook the spaghetti

  5. When both the sauce and spaghetti are ready, plate and top with cheese

For anyone going to university, lentils are cheap and easy to cook. You can turn this sauce into soup by adding more water and removing the cinnamon.
