Peppermint creams

Ingredients

  • 200g of icing sugar

  • 1 egg white

  • Peppermint essence

  • Green food colouring (optional)

Method

  1. Sieve the icing sugar into a mixing bowl

  2. Add the egg white and of the peppermint essence and green food colouring

  3. Mix well until you get a stiff dough (you may need more egg white)

  4. Taste the mixture and add more peppermint if you think it needs it

  5. Place the dough on a board and form a roll about 25mm thick

  6. Slice the roll into rings

  7. Place the rings on baking parchment/greaseproof paper to dry a little

If you want to, you can melt some dark chocolate and let it cool for a few minutes. Then dip the peppermint creams into the chocolate. Place the sweets back on the baking parchment and leave until the chocolate is set.
