200g of icing sugar
1 egg white
Peppermint essence
Green food colouring (optional)
Method
Method
Sieve the icing sugar into a mixing bowl
Add the egg white and of the peppermint essence and green food colouring
Mix well until you get a stiff dough (you may need more egg white)
Taste the mixture and add more peppermint if you think it needs it
Place the dough on a board and form a roll about 25mm thick
Slice the roll into rings
Place the rings on baking parchment/greaseproof paper to dry a little
If you want to, you can melt some dark chocolate and let it cool for a few minutes. Then dip the peppermint creams into the chocolate. Place the sweets back on the baking parchment and leave until the chocolate is set.
