350g of self raising flour
¼ tsp of salt
1 tsp of baking powder
85g of butter, cut into cubes
3 tbsp of caster sugar
175ml of milk
1 tsp of vanilla extract
Squeeze of lemon juice
Handful of sultanas
Preheat oven to 220℃
Sieve the flour into a large bowl with the salt and baking powder, then mix
Add the butter and rub in with your fingers until the mix looks like crumbs
Stir in the sugar
Pour the milk into a jug and heat for 30 seconds in the microwave
Add the vanilla and lemon juice to the milk and leave for 5 mins
Make a well in the dry mix and add the liquid and the sultanas in a combine quickly with a cutlery knife (it will seems very wet at first)
Scatter some flour on the work surface and tip the dough onto it. Cover your hands and the dough with flour and knead until smooth and not sticky
Take a 5cm cutter and dip it into some flour. Plunge into the dough, then repeat until you have 4-6 scones. You may need to press what’s left of the dough back into a ball and cut some more
Brush tops with a beaten egg and place onto the baking tray
Bake for 10 mins until risen and golden on top
