Pesto chicken (gf)

Ingredients

  • 6 tbsp of ground almonds

  • 4 tbsp of pesto

  • 2 tbsp of nutritional yeast

  • 3 chicken breasts (one for each serving)

Method

  1. Preheat the oven to 220℃

  2. Line a baking tray with baking paper

  3. Prepare the filling: in a small bowl, mix up 1 tbsp of ground almonds with 4 tbsp of pesto and mix well

  4. Prepare the coating: in a large bowl, mix up 5 tbsp of ground almonds with 2 tbsp of nutritional yeast and mix well

  5. Take each chicken breast and remove any excess fat

  6. Make a small pocket in the chicken by horizontally slicing the larger end of each breast

  7. Spoon the filling into the pocket

  8. Cover each filled chicken breast with coating (ensuring everywhere is covered) and place on the baking tray

  9. Bake for 25 mins or until the chicken is no longer pink inside (easiest way to check is the inside of the chicken should be at least 75℃)

  10. While the chicken is cooking, prepare and vegetables or carbohydrates you may want
