From our experimentations, ethanol pretreatment retained most of the nutritional parameters, which may be due to the relatively low concentration of ethanol, even if it's an extractive solvent. 

Even if a well-established fact, the experiment helped solidify the advantages of a countercurrent heat exchanger which includes a better heat transfer.
