Masala Chicken

Ingredients

4 chicken thighs

10 cloves garlic, minced

1 large onion, minced

2 chicken stock cubes,

4 tbsp masala curry spice

1 tbsp tomato puree

1 yellow spicy pepper or other chili

Preparation

Sear chicken and brown a little in some oil. Take out then fry onion, garlic, pepper and tomato puree for a few minutes. Add about 1 cup of water, and the stock cubes. Add more water when it gets too dry.

Bring to a bubble and add chicken. Let simmer for about 1 1/2 hours. Add more salt to taste.

Serve with roti or white rice.
