Enzymes 101  A Laboratory Experiment (continued)

Enzymes are special proteins that act as catalysts. There are many different enzymes, and new ones are being discovered everyday by the enzyme discovering experts, but we’re mainly interested in three particular types of enzymes; namely Metabolic Enzymes, Digestive Enzymes, and Food Enzymes.

I’ve already mentioned metabolic enzymes. Aren’t they awesome? Wouldn’t it be great if we had an unlimited supply of those little dudes? The truth is some experts theorize that our bodies can produce only a certain amount of metabolic enzymes before the organs begin to fail. Genetics, they say, is the deciding factor among individuals that will determine whether your organs begin to fail in your forties or your eighties, or whenever. These experts suggest that this contributes to the general decline of health that most people experience as they enter their geriatric years.

So, metabolic enzymes are just about everywhere in your body right now. OK, I’m sorry this has to be so gross, but imagine that we cut off my arm. Just a moment ago my arm would have been chalk-full of metabolic enzymes, but now that it’s no longer part of the system, the metabolic enzymes have become Food Enzymes, because that’s about all that my arm is now good for. If some carnivore doesn’t get to it, it will just be food for the bacteria that will have it eaten down to the bone within weeks. Either way, the enzymes are going to help break down the flesh; both while it remains on the bone and while it gets processed in the digestive tract of the lucky carnivore.

It is important to note that if the carnivore in question were to cook my arm before they consumed it, they would KILL all the enzymes. These special proteins lose their enzymatic activity at temperatures above 118 degrees Fahrenheit.

This is significant, because what do we do to most of the food we eat? We cook it, of course. And by so doing we are making the food void of enzymes. This very fundamental habit could be the trigger that causes virtually every dietary-related health dysfunction.
