How to Get your Fondant as smooth as possible

1. Divide your fondant into several pieces and begin to knead it.

2. Place a piece of fondant in the microwave for 5-second increments to soften it slighty (no more than 5 seconds or you'll melt it!) work it on your counter. I keep the other fondant wrapped in plastic wrap so that they don't get dry and crusty while I work.

3. Add a little shortening to soften the fondant, this makes it smoother and more pliable.

Once you've gotten all the pieces kneaded, put them together and knead the fondant until it's warm, soft, smooth and pliable. Remember silly putty? It should be a lot like that in consistency.

Less is more.

4. Dust a slight amount of sugar power in counter, rub it all around the area where you will be placing your fondant.

5. Measure your cake across the top and sides and add another 2 inches to the dimension. Example: If you measured 10 inches across the top and your cake is 3 inches tall, that's 16 inches of cake total. Roll out the fondant to at least 18 inches. I actually like a little more.

6. Roll it up, when you're ready to put it on the cake, roll the whole thing back onto your rolling pin. Don't try to lift it with your arms or your hands, because You will get air bubbles.

The rolling pin method allows you to roll it slowly over the top of the cake.

Once you've rolled it onto the cake, secure all around the top part first. This will prevent the weight of the fondant from tearing your fondant.

Once you've smoothed it all out with your hands, cut off all the excess fondant with a pizza or knife. Use a butter knife to tuck in any excess underneath and create a nice smooth edge.
