German Apple Cake

My mom shared this one while they were serving their mission in Germany! Sooo good and makes the house smell wonderful!

Ingredients

2 eggs

1 c. vegetable oil

1 c. white sugar

1 c. brown sugar

2 tsp. cinnamon

½ tsp. salt

1 tsp. vanilla

2 c. flour

1 tsp. baking soda

4 c. apples (peeled, cored, diced)

Caramel Glaze

½ c. butter

½ c. brown sugar

1/4 c. cream

Boil 3 minutes, add ½ tsp. vanilla.

Preparation

Preheat oven to 350º.

Grease and flour 9x13 pan. In a mixing bowl; beat oil and eggs with electric mixer until creamy. Add sugar, vanilla, beat well. Combine flour, salt, baking soda, cinnamon in a bowl. Slowly add to the egg mixture until combined. Batter will be very thick. Fold in apples by hand using a wooden spoon. Spread batter into pan.

Bake for 35-40 min. or until cake tests done.
