Pumpkin Bread

Ingredients

3 c. flour

1 tsp. soda

1 tsp. salt

1 T cinnamon

½ tsp. pumpkin spice (ginger, allspice, nutmeg)

2 c. sugar

4 eggs

1 ¼ c. oil

2 c. pumpkin

Options:

Replace 1/2 the oil with applesauce

Replace 1/2 the sugar with Splenda

Add 1 c. chocolate chips

Preparation

Mix dry ingredients. Make a well in the center and add dry ingredients. Mix only until dry ingredients are moistened. Pour into greased loaf pans. Bake at 350º 1 hr. or until tests done with toothpick.

(This seems a little long at 350º for a loaf pan)

Yield 2 large (8 ¾ ) or 3 small (7 ½ )
