French Bread 1

Ingredients

2 T yeast

2 T honey or sugar

2 tsp. salt

2 c. hot water

3 c. flour +

Preparation

Combine the above ingredients. Add 3 c. flour, mix well. Continue to add more flour until dough clears the sides of the bowl (can be 2-4 c. more). Knead for 6 min. Remove dough from bowl and shape into 2 long skinny loaves, placing on cookie sheet which has been sprayed and dusted with cornmeal. Let raise up to 20 min. Cut diagonal slits on top. Coat w/ egg white.

Bake at 375º for 25-30 min.
