Caramel Apple Pork Chops

Ingredients

6 thick pork chops

1 ½ tsp. oil

3 T brown sugar

salt and pepper to taste

1/8 tsp. cinnamon

1/8 tsp. nutmeg

3 T unsalted butter

3 tart apples, peeled, cored and sliced

¼ c pecans (optional)

Preparation

Preheat oven to 175º. Place a medium dish in the oven to warm. Heat a large skillet over med heat. Brush chops lightly with oil and place in hot pan. Cook for 5-6 minutes, turning occasionally, or until done. Transfer to the warm dish in oven. In a small bowl, combine sugar and spices. Add butter to skillet and stir in sugar/spice mixture and apples. Cover and cook until apples are just tender. Remove apples and arrange on top of chops. Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops. Sprinkle with pecans.
