Pumpkin, Green Beans and Tofu coconut curry

Ingredients for 4 people:
1 cup pumpkin, diced
1 cup green beans, trimmed and halved
1 cup firm tofu, cubed
1 can (400ml) coconut milk
2 tablespoons curry paste AND/OR your favourite curry spices
1 tablespoon vegetable oil
1 onion diced
1 teaspoon ginger, minced
1 teaspoon garlic, minced
Salt and pepper to taste
Fresh cilantro for garnish
Instructions:
Prepare the Ingredients:
Dice the pumpkin and onion, trim and halve the green beans, and cube the tofu.
Mince the ginger and garlic.
Cooking the Curry:
Heat vegetable oil in a pan over medium heat.
Add the onion and let it brown slowly.
Add minced ginger and garlic, sauté for a minute until fragrant.
Stir in the curry paste OR spices and cook for another minute.
Add diced pumpkin then pour in the coconut milk and add green beans and tofu cubes.
Pressure cook for 5 minutes OR simmer for another 10 minutes until vegetables are tender.
Season with salt and pepper according to taste.
