Chocolate Rice Flour Cake

Ingredients

1 cup of rice flour

1/2 cup of unsweetened cocoa powder

1 and 1/2 cups of sugar OR 3/4 - 1 cup of honey

1 teaspoon of baking powder

1/2 teaspoon of baking soda ADD an extra 1/4 teaspoon if using honey

1/2 teaspoon of salt

2 eggs

1/4 cup of olive oil 

1 cup of yogurt

1 teaspoon of vanilla extract

Instructions:

Preheat the oven to 350°F (180°C) and grease a cake pan. REDUCE the temperature 330°F (170°C)if you're using honey

OR Heat up your steamer

In a bowl, whisk together the rice flour, cocoa powder, sugar OR honey, baking powder, baking soda, and salt.

In another bowl, beat the eggs, then add the olive oil, yogurt, and vanilla extract. Mix well.

Gradually add the dry ingredients to the wet ingredients, mixing until smooth.

Pour the batter into the prepared cake pan.

Bake for 40-45 minutes, or until a toothpick inserted into the centre comes out clean. MAYBE longer if using honey and a cooler oven

OR Steam for 50 minutes, or until a toothpick inserted into the centre comes out clean. 

Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
