Choc Chip Rice Flour Cookies

INGREDIENTS

1 1/4 cups of rice flour

3 tblspns of  butter (room temperature)

1 tspn of baking soda

1 pinch of salt

2/3 cup of honey

1 tspn of vanilla

1 cup of chocolate chips

Instructions

Preheat the oven to 280°F (140°C)

Mix 1.25 cup flour, 1 tspn baking soda and pinch of salt in a separate bowl.

Cream 2/3 cup honey and 3 tblspns butter together until smooth, add 1 tspn vanilla just before you finish with the sugar and butter.

Add flour mixture and beat until just smooth. 

Do NOT overbeat or the cookies will be too soft. 

Add 1 cup chocolate chips.

The mix should be slightly sticky to avoid it spreading too thin on the baking tray.

You can chill the mix if you're worried about it spreading too much.

Scoop out dessert spoons of mix (about an inch or 2.5 cm round ball) and drop them on cookie sheets about 2 inches apart.

Bake for 12 minutes. Keep any eye on them after the 8 minute mark as they will brown quickly because of the honey.

Let them cool on the tray until you can lift them off with a spatula to cooling racks.

Makes 24 cookies.
