Ginger and Lemon Rice Flour Cake

Ingredients

1 1/2 cup of rice flour

1/2 cup of honey

Ginger or ginger flavouring

Lemon juice

1 teaspoon of baking powder

3/4 teaspoon of baking soda 

1/2 teaspoon of salt

2 eggs

1/4 cup of olive oil 

1 cup of yogurt

1 teaspoon of vanilla extract

Instructions:

Preheat the oven to 350°F (180°C) and grease a cake pan. REDUCE the temperature 330°F (170°C)if you're using honey

OR Heat up your steamer

Prepare your buttered cake pan.

In a bowl, mix together the rice flour, honey, baking powder, baking soda, and salt.

Add the olive oil, yogurt, and vanilla extract. Mix well.

Add the ginger and then the lemon a teaspoon at a time until the flavours are right.

Add the eggs and mix well. You may need to add a bit more flour if the mix is too runny.

Pour the batter into the prepared cake pan.

Bake for 40-45 minutes, or until a toothpick inserted into the centre comes out clean. MAYBE longer if using honey and a cooler oven

OR Steam for 50 minutes, or until a toothpick inserted into the centre comes out clean. 

Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
