Chick Pea Mushrooms and snow peas stir fry

Ingredients:
1 cup cooked chickpeas, drained and rinsed
1 pound snow peas, trimmed and strings removed
1 cup of mushrooms
2 cloves garlic, minced
1 tablespoon grated fresh ginger
2 tablespoons vegetable or peanut oil
2 tablespoons soy sauce or tamari
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 teaspoon red pepper flakes (optional)
2 green onions, sliced
Salt and pepper to taste
Instructions:
Heat the oil in a large skillet or wok over high heat. Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
Add the chickpeas and heat them through
Add the mushrooms and heat until softened
Add snow peas and stir-fry for 2-3 minutes.
Add the soy sauce, rice vinegar, sesame oil, and red pepper flakes if using. Stir-fry for 1 more minute.
Remove from heat and stir in the green onions. Season with salt and pepper to taste.
Serve immediately over steamed rice or noodles if desired.
The key is to stir-fry the snow peas over high heat for just a few minutes to keep the snow peas crisp-tender.
