These pancakes have a little less liquid than most recipes, and a lot more leavening. The result is a tall, fluffy pancake. Don't overmix it! A lumpy batter works best. Only flip each pancake once. Flip once bubbles pop and stay popped, and the edges looked cooked.
I like to serve them with a generous pad of salty butter between each pancake and an undignified amount of maple syrup. Breakfast sausage swimming in the salty maple syrup puddle along side the pancakes is correct. The video below is the recipe source.
