This stove-top mac & cheese uses a slice of processed cheese. I know, I know, I know, but hear me out. Processed cheese has emulsifiers which help prevent the genuine cheese from splitting. The dijon mustard also contains emulsifiers and adds some intensity to the flavour. The processed cheese can be left out. If doing so, increase the amount of genuine cheese to compensate. If you want to make it healthier, add some steamed broccoli. Broccoli and cheese sauce go perfectly together.
Finally, the breadcrumbs are best when made with Japanese-style breadcrumbs (panko).
