*All my cookie recipes are half-recipes, so they use half an egg. A large egg is 50 grams. So, whisk it well, then measure out 25 grams. Better yet, just double the recipe and use 1 full egg.
I make half recipes at school because students don't need more than 12 cookies. I make half recipes at home because I have no self control.
"I don't like coconut!" Shut up and eat this cookie, preferably with a glass of full-fat milk, or dairy alternative of your choice. If you don't like it, the problem is you. Sorry 'bout it... Make sure you use unsweetened coconut.
There's no such thing as a healthy cookie, nor should you strive for one. The same goes for muffins. If you want a healthy cookie (or muffin), eat a salad. That said, you can add elements to a cookie that give your body things it needs, while also giving it things it doesn't.
This cookie makes use of melted butter as opposed to softened butter. There are advantages and disadvantages to both. Melted butter is easier to use as it requires no planning. Also, it's easier to incorporate into the dough by allowing you to skip the use of a hand mixer. However, it generally leads to a chewier, denser cookie which is not necessarilly a bad thing.
