The PhD Project

ESR5 focuses on understanding the interactions between organic molecules (namely proteins and lipids) and mineral surfaces, and to develop new methods for extracting and studying proteins and lipids from ceramics. While developing these methods, this project will attempt to characterize advanced lipoxidation endproducts (ALEs) and other non-enzymatic post-translational modifications (PTMs) that form during the process of cooking organic products.
