Respiration means getting energy from food (glucose) and it happens in the mitochondria of cells.
Some fungi respire aerobically (in the presence of oxygen), while others respire anaerobically (in the absence of oxygen)
A special and very useful form of anaerobic respiration carried out by yeast is called fermentation.
This is when glucose is converted into carbon dioxide gas and ethanol (alcohol).
We use the waste products of fermentation in bread making to make the dough rise and to produce alcohol in wine and beer making.
