Research is focused on applied research to add value to indigenous fruits and vegetables (such as Indian gooseberry, Pilangkasa (Ardisia elliptica Thunb), mulberry (fruits and leaves), aromatic coconut, and etc.) and utilization of waste from fruit and vegetable processing. Characterization, extraction, encapsulation and application of bioactive compounds from local raw materials are performed in this laboratory. Shelf-life extension of fruit and vegetable products such as fruit juice and fresh-cut product is also another area of research focus.
