Our laboratory’s research focuses on a diverse range of advanced food processing technologies, including ohmic heating, high-pressure processing (HPP), thermal and aseptic processing, extrusion, and computational modeling of food processes. We place particular emphasis on the development of ohmic heating equipment, notably ohmic-assisted thermal sterilization (OATS) or ohmic retort for packaged foods, continuous-flow ohmic heating systems for liquid foods and liquid foods containing particulates, moderate-electric-field-assisted extraction of natural food colorants from plant sources, and ohmic-assisted hydrodistillation extraction for natural essential oil.
Through industry collaboration, we have licensed our OATS and continuous-flow ohmic heating systems to Thai machinery manufacturing companies. These systems are now produced at a commercial scale, enhancing the capabilities of food producers. They have also been successfully installed and rigorously verified to meet the quality and safety standards of the food industry.
