Offer vs. Serve (OVS) is a USDA approved meal service method that means the school cafeteria offers all required food components each day, but students have the option to choose the food on their plate instead of being required to take every item. Schools across the nation of all grade levels practice OVS to help reduce waste, respect student preferences, and simplify cafeteria operations.
