LabXchange - From Harvard, this site has fantastic resources, including many videos and interviews with actual scientists. (This was recommended by Dr. PJ Utz, at Stanford - unlike me, he still has a license to practice medicine, but he went down the evil path and is now and administrator and hasn't seen patients in years.)

Florida Students Lesson on Fossils
Brain Pop. I am not a fan of Brain Pop, but I think Brain Pop for this is pretty good.
Atlas of Ancient Life - This has a some good information on making fossils. This is too advanced for some 8th students but could be adopted for other students or used for differentiation.
NY PBS Learning Media - Some great videos. Unfortunately, some of the activities require Flash and don't work well on modern computers and devices.
