Abstract: This paper compares the differing mortality rates between African Americans and white people in Florida during the 1918 flu pandemic. It argues that the 1918 flu represents a larger truth about pandemics in general: pandemics almost always disproportionately affect persons of color.

Abstract: The Gumbo Roux-te digital humanities project maps the historic transnational paths of food, people, customs, and ideas that relate to the ingredients and culinary practices of the gumbo dish. Utilizing digital mapping to tell a complex story about a distinctly American dish, the project will show how American food has developed over time.
