Lemon Slice

Lemon slice

Lemons are readily available all year. This is a quick and easy lemon slice that can also be made with oranges.

INGREDIENTS

200g butter a

1/4 cup golden syrup

1 lemon

1 1/4 cups plain flour

1/2 cup sugar

1/2 cup coconut

1 1/4 cups cornflakes

1 teaspoon baking powder





METHOD

Preheat oven to 180 degrees celsius.

Gather your ingredients.

Line a tray with baking paper. I use pegs to hold the paper in place.

Place the butter and golden syrup into a pot.

Grate the rind of the lemon into the pot.

Keep the lemon for making the icing later.

Melt all of the ingredients together over a low heat.

Add all of the dry ingredients to the melted ingredients and mix together.

Press into tin. (Remove pegs from tin if you were using them to hold the paper in place)

Cook in oven for 20 minutes or until starting to brown.

Remove from oven and allow to cool in the tin.

lemon icing

Mix 1 1/2 - 2 cups of icing sugar with the juice of the lemon.

Add 10 g of melted butter.

Add a teaspoon at a time of boiling water until you have a thick icing.



Spread the icing onto the cooled slice.


Allow the icing to set.

Cut into slices and enjoy!
