Matter is any substance with mass and volume, a substance is a specific type of matter, and a element is a pure substance made of one type of atom, a compound is a pure substance made of different types of atoms chemically bonded, an atom is the smallest unit of an element, and a molecule is a group of two or more atoms, of the same or different elements, bonded together.

How does air pressure affect the boiling point of water and why is it important to know that? What does that have to do with pressure cookers?
Higher air pressure results in a higher boiling point, while lower pressure causes a lower boiling point.
Trapping steam to increase internal pressure, which raises the boiling point of water to over 212°F (100°C).

Why is it not a good idea to use mass to identify a substance? Is there a better property for doing so? Which one? Why?
Because mass is an extensive property, meaning it depends on the amount of the substance, not its type.
